The “crunchy” element or how to expand the range of meals and textures to enrich raw menus. This step is important to vary the pleasures, prepare different foods in advance and facilitate the transition to an increasingly raw diet.

Dehydration is a preparation technique essential to those wishing to increase their consumption of raw foods. Of course, it’s important to favour fresh and whole foods, untransformed, that have great hydrating properties. However, it’s useful to add almost-cooked, crispy foods. These can complete fruit and vegetables in a pleasant way, reinforce the flavors of certain marinated preparations and facilitate the planning of menus, as dehydrated foods keep much longer.

This class deals with the following topics:

* The use of an Excalibur dehydrator- although other models can be used, too;
* How to create biscuits and crunchy crackers;
* The preparation of crunchy granola that keeps long;
* The secrets of the “essene bread” made of sprouts;
* Quiches and other raw tarts;
* Crepes and wraps;
* Macaroons, cookies and desserts that vary crispy and melting textures;
* Preparation, mixture, spreading and dehydration time techniques;
* Inspiration, ideas, and much more…

What’s included:

* Six whole hours of teaching and demonstrations;
* The possibility to make your own recipes and try out various techniques;
* Numerous tasting opportunities throughout the workshop;
* A real meal that consists of many raw recipes made of organic, top quality ingredients
* A printed booklet covering all the recipes made and tasted in class as well as useful information;
* Advice regarding local suppliers for equipment and ingredients;
* Meeting and sharing with other people with similar interests;
* The possibility to be part of a group of people practicing raw food, in the form of potlucks and an online forum for discussions and support…

You will be tasting many dishes and drinks: crunchy granola, flax seeds crackers, sprouts or cereal bread, wraps or crepes, veggie burgers and croquettes, macaroons and cookies- everything raw and dehydrated for a real crunchy pleasure!

It is recommended to have followed the class Simply Raw Level 1 or to already be familiar with the principles of raw food, although that is not required. This course does not serve as an introduction, it rather represents a further step into a better knowledge and practice of raw food.

Location: Morges (near Lausanne), parking available, 5 minutes by foot from Morges St-Jean train station, 15 minutes by foot from Morges central train station- more specific details will be provided when you subscribe.

Dates: No class has been scheduled yet. However, it can be organized on demand. A minimum of 6 people is required.

Timing: 10 am to 4 pm

Price: CHF 185.- to be paid in advance

Conditions: The number of seats per class is limited. The class may be canceled by the organizer if there are fewer than six confirmed participants who enroll. The final decision will be made several days prior to the class date. Payment is required in full prior to the class. Advance payment is the only way to fully secure your booking. In case the class is canceled by the organizer, payment will be immediately refunded or credited for a class at a later date.

Cancelation policy: Please note that bookings are not refundable once made but can be transferred to a third party upon request. If you miss the class for any reason out of your control, there will be no refund for en empty seat, even partial, because of advanced preparation, purchase of fresh and perishable foods, other costs incurred as well the reserved seat which has remained empty.
